Italian Quinoa Salad

We don’t always have plenty of time to spend in the kitchen whipping up amazing food, but that doesn’t mean we can’t eat well. If your looking for a great nutritional meal that takes next to no time to cook, this Italian Quinoa Salad is it!

We usually like to pre-cook and fridge-store our quinoa, which knocks a good 15 mins off the prep time. Always a great thing to have ready when you need nourishment in a hurry. All you need then is to dice and serve.

A great recipe by Delicious Nutrition.

Ingredients:

1 cup of quinoa

2 cups of water

1 can of chickpeas

5 big romaine lettuce leaves

1½ cups of cherry tomatoes

½ cup of frozen peas

3 stalks of celery

1 avocado pear

5 basil leaves

½ cup of balsamic vinegar

2 tablespoons of Italian spices

Instructions:

  1. Add your dry quinoa to a pot with 2 cups of water and bring it to a boil. Reduce to a simmer and cover, cooking for 12-15 mins.
  2. Heat up your frozen peas according to the packaging.
  3. Chop up the romaine, celery, cherry tomatoes, and fresh basil.
  4. Add all ingredients to a big bowl and combine
