Chocolate Chia Seed Pudding
With deserts this easy to make and healthy too, who says you cant have pudding everyday? Sweetened with maple syrup and topped off with fresh fruits and chocolate bark, this chocolate chia seed pudding by The Buddhist Chef is a delightful summer treat. The kids will love it too! 1 2/3 cup canned coconut milk
8 tablespoons of chia seeds
2 to 3 tablespoons of maple syrup
1/4 teaspoon vanilla extract
2 tablespoons of cacoa powder
- Mix all ingredients using a immersion blender or a whisk.
- Place in the refrigerator for 1/2 hours or until the Chia seeds turn jelly-like and the mixture thickens.
- Serve topped with fresh seasonal fruit and chocolate bark.
